I’m not sure what to call this yet. Just one of Jan’s Gluten Free treats I guess. We’ve been calling them those whatcha call its.Anyway, hope you like them.
1, 12 oz. Package GF white Chocolate Chips ( I used Nestle brand)
1 Tablespoon Cocoa powder
3/4 cup GF Chunky Peanut Butter
2 Cups crushed Rice Chex
In large mixing bowl, melt White Chocolate chips for about 2 minutes in Microwave. Add cocoa powder and Peanut butter. Stir until well creamed together. Then add crushed rice chex. Mix well, and pour into a parchment lined 9×13 pan. Spread to desired thickness, refrigerate for about 5-10 minutes. Cut into squares or just break apart and enjoy!
( note, to crush the rice chex, I just pour them in a bag and crush them with my rolling pin. Someone has asked me why not use rice crispies. The GF rice cereal, I’ve found just doesn’t hold up in this recipe.)
